Test Batch #49 – End of Season 2021 – Each year we take the final peppers we harvest and make a few end of season hot sauces.  This year’s version is made with scotch bonnets, jalapenos and bishops hat peppers paired with red onion and rioja garlic then balanced with apples and cherries from our trees.  This batch fermented for 2 months before being pulled and mixed down with white wine vinegar and a touch of buckwheat honey.  It’s nicely hot with a good balance between sweet & savory.  Heat level = 7 of 10
